I am just now remembering what it felt like when we first set out to build Peace IV. We had severe financial limitations, too much enthusiasm, and my husband had a cracked pelvis from a recent sailing injury. But we started anyway and a neighbor boy age 9 was curious about the sounds of sawing and drilling and he looked into the shed and after several days of looking, he started handing my husband the next tool because he could figure out what was needed. He was a quiet kid, thin and runty, but pleasant. He asked a few questings and listened to the answers, and we three built that boat working 3.5 years over a 5 year period. He grew up to become a boat builder.
If I give you this advice, please forgive me for being so forward. Just follow the plans and be happy and get the job done quickly. Sailing is way more fun than building and changes take a lot more time than you could ever believe.
