Trying to find some input for the difference between Pahi 31 and Tiki 30.
I like the look better of the Pahi 31 but my main concern is which one as the most interior room in the hulls?

How about a Romany 34 has way more room than both Tiki and pahi , probably more room than a Tiki 38 an I so happen to have one for sale ...LOL
I don't have any of these designs (I own a Tiki 26), but for the pictures that I have seen, the Pahi 31 has more interior volume than the Tiki 30. However to me the interior layout of the T30 seems to be more comfortable: you can sleep with your head pointing to the bow (more easy to get into and out othe bed) and you enter into the cabin by a side companionway instead of a deck hatch. Note that in the P31 there is a semibulkhead over the bed that can lead to head bumping if you try to sleep head forward. But, in the other hand, the P31 has a separated head and a cabin with a kitchen and a table that could be very nice to have when there is some cold.
Also the P31 is a more older design, and it is more complicated and expensive to build than the Tikis or the Ethnic designs. I have a 2003 price list from JWD in which the estimate cost in pounds excl. VAT for building a T30 is 11.000 and 15.000 for the P31. I suppose the cost are bigger now, but what matters is that the P31 cost 36 % more to build than the T30. Also the building time estimate by JWD for the P31 is 1.500 hrs against 900 hrs for the T30, that is 66 % more time.
To me, if you prefer the P31, then it makes more sense to buy a good used one and possibly make some changes to improve it. I don't think the above comments about the accommodation are a big problem, for example the entry to the cabin, with some effort, can be changed to a side companionway (there are reports about that modifications in the old Sea People magazine).
I think you are right about the cost of building the Pahi 31 being higher than the Tiki 30. Probably the time to build might also ba more work.
One thing that I don't trust is the time estimate that Wharram post on the website for any design. I think it is complete BS. The reality is probably more like twice the time estimate if not more.
Maybe I should ask in a post, to see what people answer. Maybe the people that build a catamaran can tell us if it took more or less the time estimated?
It is not wise to sleep with one's head towards the bow while underway. If a boat traveling at 5 knots impacts a solid object (reef, land, piling, etc.) and comes to a sudden stop, the forward momentum of your relaxed body will pass through your neck when your head stops at the bulkhead, likely breaking your neck.

I think it is an interesting observation, and your description of the possible scene is pretty scary!
In the top right corner of this page there is a search button, if you write "pahi 31" then you will find some pictures.
Also you can join the "Small Pahi Group" in this forum, where there are some pictures and information about the p31.
There are not many pictures of the P31 in internet, in part it may be because the p31 is a "pre-internet" model.

But, even in these magazines there are not many articles about the p31. Perhaps not many have been built (in comparison with the other models). To me the P31 is a very particular design. It is ocean-going and is small enough to be easy to handle, but lacks standing headroom. Nor does the T30, but the P31 seems to be more oriented to long-term cruising, while the more simple T30 is more suited to short cruises, where people are less concerned about this last point. To me standing headroom in a small vessel is not important, but most people must prefer a bigger vessel with standing headroom.
