Center pod of what? A little more information is required in order to answer your question.

Tiki 38 with single engine pod in middle of deck in front of rear mast. The options is to mount one engine in present location and other engine as backup in storage, mount both on one central pod and use one or both at a time, or build new pods acording to original plans one port one starboard. I understand that having 2 engines centrally mounted wil not help manauvering. How often does one need to motor with both engines at a time? Having second engine in storage is more secure and less corotion but wil need time to fit in a emergency.

It is possible to mount two engines in one location provided it was designed to hold and support two at the same time, as well as endure the extra torque and weight.

As for how often someone needs to use two engines at a time, it is a sailboat - no engines are required if you have the skills and patience. That being said, if you find yourself needing to push through an adverse seaway, current, and/or wind situation, not only will you want both engines, it is likely that you will want more HP than you have at the time.

An old military saying: Two is one, one is none. It always holds true at some point, especially in emergencies.
