Height of the waterline - Tiki 38ft

Dear All, 

My transformation of the TIki 38 is coming along nicely. Though I now need to understand how to calcualte the height of the waterline (antifoul) with the weight added to the boat. 

My Tiki 38 is being converted into a tiki bar (with tiki roof) and sailed with a kite when need be and the towed behind my converted fishing trawler.
